To make it auto-start, I had to run “sudo systemctl enable vpnserver”

have you tried using ppa like https://launchpad .net/~paskal-07/+archive/ubuntu/softethervpn ?
I suppose updating software with deb-packages is easier than downloading new binaries from site.

You are right, it is more easy, but you have old version… without support tls 1.2
