KDE Plasma is lighter than XFCE. I don’t know on any base you have suggested Xubuntu as medium light weight alternative to Ubuntu while there is Kubuntu.

It’s not minimal 512mb ram for ubuntu server, But it’s 412 mb ram. I tested it on my old pc with 4 ram sticks of exactly 100 mb and i found a ram stick of 12 mb lying around and with exactly 400mb ram i had kernel panic because it ran out and when i put my 12mb ram stick in the pc ubuntu server worked.
